Vegan Taco Night with Ava (Gluten-Free) Monday June 30th 5pm - 7:30pm

Tacos are a classic tasty crowd pleaser, but sometimes it can be hard to find a vegetarian alternative that’s just as flavorful as the meat options. Join us for this class and together we’ll learn how to make two different delicious vegetarian taco options.
First, we’ll make a dough with masa harina, which we’ll press and cook into perfect homemade corn tortillas. Next, we’ll make a flavorful filling that mimics ground beef, but is made with the brain-powerhouse mushroom, Lion’s Mane, along with walnuts and various seasonings to create a beautiful texture and flavor.
We will also create a chipotle sweet potato and black bean filling and a couple of tasty toppings to accompany both. A fresh salsa that’s both sweet and tangy with the addition of pineapple is the perfect combination to add some brightness.
Finally, we’ll use soaked cashews to create a smooth crema to top everything off. In addition to being vegan, what we’ll be preparing in this class is entirely gluten free!

Artisanal Vegan Cheesemaking Class with Ava Monday July 28th 5pm - 7pm

Are you interested in dairy alternative cheeses that perform like the real deal and taste delicious?! This class is for you! Whether you’re dairy intolerant, trying to cut back, or just curious about vegan cheese alternatives, please join us for this class! We will be using nuts, tofu, and a variety of seasonings to create three different cheese alternatives, each with their own distinct texture and taste. First, a vegan mozzarella made from cashews that is soft and mild. We will also be making a spreadable herbed cheese perfect for a charcuterie board. Lastly, a shreddable and sliceable hard cheese with a smokey flavor similar to a Gouda or provolone. Explore new ways to utilize pantry ingredients to transform them into delicious vegan cheeses! Once we finish, we will enjoy our creations together with a charcuterie board full of our dairy free cheeses and other goodies. Bring a friend and maybe some wine to enjoy this artisanal vegan cheese making class!
