Seafood dinners don't have to be reserved for restaurants. In this class, you'll learn a handful of simple techniques that will help you prepare fresh, elegant seafood meals with confidence at home, all while enjoying a menu that's perfect for summer.

We'll begin by demystifying one of the most approachable (and impressive) seafood dishes you can make at home: steamed mussels. You'll learn how to select, clean, and cook mussels with confidence, creating a fragrant broth that's perfect for soaking up with good, crusty bread.

For the main course, you'll learn the technique of fish en papillote, cooking fish in parchment packets with vegetables, herbs, and aromatics. This simple method can be endlessly adapted with different fish, vegetables, and seasonal ingredients. Alongside the fish, we'll enjoy a warm, French-style potato salad dressed with a dijion vinaigrette and lots of herbs.

To finish, we'll make a zippy, creamy Key lime pie, the perfect refreshing ending to a summer feast.
